My first time visiting the Lexington Co-op did not occur until after college, as a young adult. I remember walking through the store for the first time and seeing the produce labels that mentioned where the food was grown and the farm's location. This was something I had never seen before, and provided a real connection to the food I was purchasing and consuming. I remember thinking: "This is how it should be.” This experience, among others at that time, began to show me my true passions in life.
Over the past 10 years, my interests have pointed me towards all things “health and wellness” related. With a background in environmental engineering and consulting; I became increasingly more and more passionate about nutrition, human performance, wellness practices, food systems, and sustainable agriculture. It became apparent to me that our own individual health has the most direct impact on the health of our planet as a whole.
Today, I am a full-time entrepreneur who co-owns a local functional mushroom company, manages properties locally, and ski instructs in the great state of Utah. Outside of work, you can find me doing one of my many hobbies; skiing, traveling, hiking, cooking, gardening, etc. I have lived quite the transient lifestyle since college, but Buffalo has always been my home base, and the Co-op is one of those places that makes this City so special to me.
