Lexi’s Beef Chili

Our scratch-made beef chili recipe is hearty and flavor-packed with wholesome ingredients like organic beans, veggies, and a touch of smoky spices. Perfect for cozy nights and game day gatherings!

Ingredients:

  • 1 lb ground beef

  • 1 qt water

  • 32 oz can crushed tomatoes

  • 14 oz can kidney beans (organic)

  • 14 oz can black beans (organic)

  • 16 oz package pumpkin puree

  • 1 small onion, diced

  • 1 red bell pepper, diced

  • 1 green bell pepper, diced

  • 3 cloves garlic, minced

  • 1/2 jalapeño pepper, minced

  • 1 tbsp apple cider vinegar

  • 1 tbsp smoked paprika

  • 1 tbsp ancho chili powder

  • 1 tbsp chipotle chili powder

  • 1 tsp ground black pepper (to taste)

  • 1 tbsp kosher salt (to taste)

  • 1/4 cup canola oil (organic)

  • 1 tbsp chicken base

Preparation:

  1. Cook the Ground Beef:
    Heat the canola oil in a large soup pot over medium heat. Add the ground beef and cook until browned.

  2. Prepare the Vegetables:
    Add the diced onion, red bell pepper, green bell pepper, garlic, and jalapeño to the pot. Sauté until the vegetables are tender and aromatic.

  3. Combine Ingredients:
    Stir in the pumpkin puree, crushed tomatoes, water, kidney beans, black beans, and chicken base.

  4. Season the Chili:
    Add apple cider vinegar, smoked paprika, ancho chili powder, chipotle chili powder, black pepper, and kosher salt.

  5. Simmer:
    Reduce the heat to low and let the chili simmer for 30-45 minutes, stirring occasionally to prevent sticking.

  6. Taste and Adjust:
    Adjust the seasoning if needed. Add more salt or spices to taste.

  7. Serve:
    Ladle the hot chili into bowls and enjoy with your favorite toppings like shredded cheese, sour cream, or fresh herbs.
