Prost to Crocktoberfest!

It’s time to don your lederhosen and bust out your crockpot to celebrate Crocktoberfest! As the weather starts to chill nothing sounds or tastes better than a nice warm meal. What’s even better about a Crocktoberfest feast is that these delicious meals are all cooked right in your crockpot. Toss in the ingredients , turn the crockpot on, and spend your day dreaming about the great fall meal that will be ready and waiting for you.

Lexi’s Apple BBQ Pulled Pork

  •  2 cups BBQ Sauce
  • 1/2 cup apple cider
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1/2 onion (diced)
  • 1 Tbsp garlic (minced)
  • 2 Tbsp chili powder
  • 1 Tbsp ground cumin
  • 1 Tbsp salt
  • 1 Tbsp black pepper
  • 4 lbs pork shoulder (diced)

1.  Place all of ingredients in crockpot. Stir to combine.

2. Cover and cook for 6-8 hours on low

3. Carefully remove the pork from the pot and flake apart with two forks

4. Add the pork back to the sauce.

 

chili

Beef Chili

  • 2 lbs ground beef
  • 2 28 oz cans crushed tomatoes
  • 1 15 oz can kidney beans
  • 1 15 oz can black beans
  • 1 15 oz can pumpkin puree
  • 1 cup water
  • 1 small onion diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 3 jalapeño pepper, minced
  • 1/4 cup apple cider vinegar
  • 2 tbsp sugar
  • 4 tbsp smoked paprika
  • 4 tbsp chili powder
  • 2 tbsp ancho chili powder
  • 1 1/2 tbsp salt
  • 1 tbl pepper

1.  Drain and rinse beans.  Combine all of the ingredients in a crockpot and mix well.

2.  Turn it on medium and cook for 4-6 hours.  Skim any fat that may surface.  Serve immediately, or refrigerate for up to 5 days.

 

Sweet Potato Lentils

  • 3 large sweet potatoes, diced
  • 3 cups vegetable broth
  • 1 onion, minced
  • 4 cloves of garlic minced
  • 2 tsp ground coriander
  • 2 tsp garam masala
  • 2 tsp chili powder
  • 1/2 tsp salt
  • 1.5 cups uncooked red lentils
  • 1 can coconut milk
  • 1 cup water

1.  Place the sweet potatoes, vegetable broth, onion, garlic, and spiced in a crockpot. Cook on high for 3 hours, until vegetables are soft

2. Add the lentils and stir once. Replace the lid and cook on high for an additional 1.5 hours

3. Stir in the coconut milk and as much water as needed to get desired consistency

 

Applesauce

  • 3lbs apples (any variety)
  • 2 cinnamon sticks, optional
  • 1 Tbsp lemon juice
  • 1/2 cup water
  • 1/4 tsp salt

1.  Peel and core the apples. Cut them into 1-2 inch pieces, depending on how chunky you prefer your applesauce

2. Combine all the ingredients in the slow cooker

3. Cook on high for 4 hours stirring twice during cooking.

4. Cool, enjoy, or store.

 

Moroccan Beef Stew

  • 5 lbs stew beef
  • 1 onion
  • 2 cloves of minced garlic
  • 1 tbl sea salt
  • 2 tsp ground black pepper
  • 1 tbl turmeric
  • 1 tsp powdered ginger
  • 1/2 tsp cayenne pepper
  • 2 28 oz cans diced tomatoes
  • 2 cups chicken broth
  • 1 bunch fresh cilantro, chopped
  • 1 cup dried parsley, chopped
  • 2 cups raisins

Recipe makes 4 quarts. Half this recipe for smaller crockpots.

1.  Combine all of the ingredients together in a crockpot

2. Cook on medium for 4-6 hours, or until the meat is very tender
